it depends on context. Are emails part of the application under test, then many could be used. Imagine testing a mail host/server or mail chimp or something that sends notification emails. In the solutions I test these days no emails are involved.
Do you have a specific problem in mind regarding emails?
I was not clear in my post. What I meant was when you test applications that send mail, how many email domains do you use for testing. I missed the word domain 🙂
