I’ve been looking at using analytics data for risk assessment, I am not the only one as I attended a conference where a speaker discussed it extensively.

Why not both?
I would say that UX as we see it today includes usability testing.
A lot of the most recent work around UX, removes it from the realm of testing and puts it more into the world of the customer and the people that work with the customer to build the product.
